How our wines are born

Our vineyards grow illuminated by the light of sunsets on Lake Garda, on the eastern shore where the climate is milder and the grapes have the opportunity to grow healthy and fragrant. This is where our wines begin their journey. 

In addition to the native varieties of the Verona tradition such as Corvina, Rondinella and Molinara, we also grow some regional varieties such as Pinot Grigio, plus some international ones such as Merlot. This allows us to produce a wine range that embraces the best excellence of our territory. 

The first step to ensure the quality of wines is the careful selection of grapes, which starts between rows and is the result of a long process of care throughout the months in which the vines grow and sprout. 

The harvest is one of the most delicate and important moments in our production process. Carried out at the ideal moment of ripening of the grapes, the harvest is done manually for our most valuable wines, and with mechanized methods for the highest volumes. The quality standard is always very high. The harvested grapes are immediately transported to the cellar to preserve their freshness and organoleptic properties. Each harvest is the result of meticulous care, to ensure maximum freshness and aromatic complexity. 

The harvest period goes from late August to mid-October, but each grape has its own moment. For the Chiaretto di Bardolino Spumante Brut, the grapes are harvested towards the end of August to maintain their typical freshness, while the grapes for Il Decanto Rosso Verona are harvested towards the end of September, selecting the best grapes to obtain a wine with excellent structure and intense aroma. Between August and September there is always a great stir between the rows, because it is essential to identify the right time for the harvest, analyzing the clusters every day.

Once the grapes have been harvested, they arrive in the cellar where they are further selected and where the crushing, fermentation and ageing phases begin. Each wine has a more or less complex production method to follow, but with the same result: bring on your tables wines of the highest quality.
